You can see Three Hearts and Three Lions in the first Eternal Champion story. Long time since I read either of those but I think you're right.

As someone who only got into S&S style fantasy within the past 18 months or so, I can say that reading the Elric saga played a huge part in capturing my interest. I had heard great things about it, and was lucky enough to find a copy of the first three books in my college library. It really blew me away. I'll admit that Moorcock's prose struck me as a little straightforward and not as artsy as I usually like, but the story itself and the character of Elric were terrific. The undercurrent of psychedelic horror running through the series set it apart from other fantasy series I had read.
Last year I read the first three books of the Corum series, and while I enjoyed it, it didn't really hook me like Elric had. I found the character of Corum himself to be a very interesting concept, but the story seemed a little bland for my tastes. I still want to check out the Erekose series. I haven't read any of the Elric novels outside of the main six book DAW sequence, but I might have to check out this new one when it comes out.

The first three Corums are pretty good, the last three seem to be a push to get to an outcome. The Erekose stories are a bit challenging, especially Dragon on the Sword. Hawkmoon's the only one who gets a happy ending.

Could also maybe give The Warhound and the World's Pain a shot. Perhaps also try The Fortress and the Pearl as a relatively stand alone yarn from the Elric series.

Maybe it was just me but I found the whole old White Wolf Von Bek volume on the challenging side. Anything after Quest For Tanelorn began to get extremely complex.

Warhound and the World's Pain is the first of the Von Bek books, approx 200 pages and a more straightforward read than the rest, which are longer and, as you say, more complex. I wouldn't recommend any more of the Von Bek books to a relatively new reader for the reason you mention. The second of the Von Bek series City in the Autumn Stars for instance is definitely a more consciously literary picaresque which works in alchemical symbolism amongst other things.* The Fortress of the Pearl is probably at the crossover point between the older yarns like Sailor on the Seas of Fate and the later more literary Elric novels like The Revenge of the Rose. *Wikipedia states that City in the Autumn Stars was written in tandem with The Laughter of Carthage, one during the day and one at night - an astounding feat!
